Neighborhood bakery · baked at dawn

Sourdough, baked in the golden hour.

Stone-milled flour, a levain we've kept alive for years, and a morning oven that starts at 5 am. Everything baked today is sold the same day — never the shelf.

The signature loaf

48 hours in the making.

Our country loaf ferments slowly in the cooler for two full days before it ever meets the oven. That time is the whole trick — a deep, lightly sour crumb, a crackling crust, and a loaf that keeps for days.

The morning ritual

Layer by layer, by hand.

We laminate every croissant by hand — folding in French butter 27 times to build those 72 delicate layers, then letting the dough rest overnight. The result is shattering flake and a proper buttery crumb.

Our process

Slow by choice.

  • Stone-milled flour from a regional mill
  • A living levain we've fed every day for years
  • Small batches tied to a single morning oven
  • Sold the same day — never the shelf

Word of mouth

Kept by the neighborhood.

“The country loaf is the reason our Saturdays exist. I plan the whole week around it.”

— Maya, a regular

“I arrived at 9:15 one Saturday for a kouign-amann and there were two left. I've never been early enough since.”

— Dan, weekend baker

“My kids ask for 'the golden bread' by name. It's the croissant, but I'm not correcting them.”

— Priya, morning regular

Good to know

Questions, answered.

Are your breads available at the farmers market too?

Yes. We bake a larger batch every Saturday morning specifically for the neighborhood farmers market, and we always reserve a few loaves for the counter.

Do you take custom orders for weddings and events?

We do. Tell us your date at least a week ahead and we'll build a small-batch order of loaves, croissants and seasonal pastries. Pastry boards for big events are limited by our single oven.

Are you open on weekends?

We're open Tuesday through Sunday. We close on Mondays so the oven — and our bakers — get a rest.

Do you ship your bread?

No. We bake fresh for the counter and the farmers market, and we don't ship. If you want one, come by while it's still warm.

Do you offer gluten-free or nut-free options?

Our kitchen handles wheat and nuts, so we can't guarantee a completely allergen-free bake. Ask at the counter and we'll walk you through what's safe for you.

See you at the counter
